Easy Weeknight Chicken Parmesan


Ingredients:
1-2 lbs chicken breasts 1 can plain tomato sauce 1 package pasta (I use spaghetti but anything will work) Shredded cheese (mozzarella and/or cheddar) bread crumbs 2 eggs beaten 3 Tbsp vegetable oil
Directions:
Pound chicken breasts with meat hammer until thinner. (This is a great stress reliever!) Cut in half to create thinner pieces. They don't have to be paper thin but they cook faster if they are pounded out some. Dredge chicken in egg wash and then in bread crumbs. While sauce is heating and water boiling for pasta, fry chicken in hot oil until brown on both sides and cooked through. Sprinkle shredded cheese and let melt or put in hot oven to speed the process. Serve with side of cooked pasta and sauce. This whole process takes about 30 minutes.
