Carrot Loaf


Ingredients:
2 c. cooked carrots, mashed 2 slightly beaten eggs 1/2 tsp salt 1/2 tsp pepper 2 Tbsp sugar 1/2 c cream or evaporated milk
Directions:
A retro treatment for veggies from my mother-in-law's recipe box, Gladys Christensen's recipe. Preheat oven to 350°F. Combine all ingredients. Mix well. Place in a greased casserole or mold. Set in a pan of hot water. Bake at 350 degrees F until firm, about 45 min. Turn out loaf onto a hot platter, surround with buttered peas.
