4 c. milk
2 eggs
2/3 c. sugar
1/4 tsp. salt
2 c. crushed crackers
1 c. shredded coconut
1 tsp. vanilla
Directions:
Scald milk in heavy saucepan. Separate eggs.
Beat egg whites until stiff; set aside.
Beat yolks with sugar and salt.
Stir in small amount of milk, then combine mixture with remaining milk in saucepan.
Bring to boil and add the crackers and coconut. Cook, stirring, until thick. Remove from heat and add vanilla. Fold in egg whites. Serve warm or cool.
Serves 6–8.
