I worked at an Insurance Company in Hartford for several years. I went to an employee's anniversary party in the break room, where I first tasted this appetizer. The recipe was from a woman named Maria; a middle-manager who was normally not very approachable. Being me, I approached her and asked her about the appetizer. It had no name; she just made it. She rattled off the ingredients. Now, many years later, I tweaked the recipe, I named it and now I am sharing it with you!
Two garden-fresh tomatoes
Extra-virgin olive oil
a good quality 3-inch block of feta cheese
dried basil or oregano
slice the tomato into circles, then slice the circles in half so you have "D" shaped slices. Arrange them on a glass platter. Drizzle the olive oil onto the tomato slices, then drizzle on the raspberry vinegar. Cut off a square of the feta cheese and crumble it onto the tomato slices. Drizzle a little balsamic vinegar over the feta on the slices, then sprinkle some dried basil or oregano on top. Serve immediately. Enjoy! -Diana
