Japanese Noodle and Cucumber Salad More Recipes Like This

Ingredients: Metric Units
1/2 pound soba noodles or thin spaghetti
6 Tbsp. rice wine vinegar
2 tsp. soy sauce
1 tsp. salt
1 medium cucumber
1 Tbsp. thinly sliced green onion
1.5 tsp. sesame seeds for garnish
Directions:
Cook noodles until just tender. Drain and rinse in cold water. Drain and transfer to a medium bowl. Add vinegar, sugar, soy sauce and salt. Mix well. Cover and chill until cold. Peel and seed cucumber. Cut into quarters lengthwise, then into think pieces. If not serving right away, wrap cucumber pieces in plastic and refrigerate. To serve, divide noodles amoung 4-6 serving bowls. Top with a small handful of cucumber slices, a few slices of green onion and sesame seeds. Serve cold. Serves 4-6. Enjoy! -Diana
