Ingredients: Metric Units
4 to 6 cups chicken or beef broth
2 eggs
1/4 cup shredded Parmesan cheese
2 Tbsp. minced parsley
Additional shredded Parmesan cheese
Bring broth to boiling. In a small bowl, beat eggs to blend with 1/4 cup cheese and parsley. Pour mixture into boiling liquid and IMMEDIATELY remove from heat; DO NOT STIR. Ladle into bowls and pass the additional Parmesan cheese at the table. Makes 4 to 6 servings. Enjoy! -Diana
