Microwave Peanut Brittle

Ingredients:
1 cup sugar 1/2 cup light corn syrup 1/4 tsp. salt 1.5 cups unsalted dry roasted peanuts 1 tsp. butter 1 tsp. vanilla 1 tsp. baking soda extra butter for greasing 2 small to med. sized cookie tins lined with quart sized baggies (the twist-tie kind)
Directions:
This sweet candy makes a great Christmas gift (just check for nut allergies first!). Prepare the pan: Don't wait on this; everything happens pretty quickly in the "candy world" - the melted sugar won't wait. Line a 9 x 13 inch pan with foil; butter the foil and butter a metal spatula. Do not use a rubber spatula - they melt. Combine sugar, corn syrup and salt in a large microwave-safe glass bowl (preferably with a handle). Stir in peanuts. Microwave on high for 4 minutes. Stir with a wooden spoon and microwave another 4 mins. Mix will be boiling. Add 1 tsp. butter and vanilla and microwave for 2 mins. Add baking soda and quickly stir until light and foamy. Working quickly, pour into foil-lined pan, scraping bowl, and spread out with buttered spatula. Be careful not to get any on your hands; this stuff is HOT. Let stand until cool; about 1 hour. Peel brittle off the foil and break into pieces. Place in baggies/tins, twist-tie closed, then close the tins. Makes 2 tasty gifts. Enjoy! -Diana
