Chocolate Dipped Apricots
One 16 oz. container dried apricots
1 cup semi-sweet chocolate chips
1 tsp. vegetable shortening
Line a baking sheet
with waxed paper.
Melt shortening and chips together in microwave on high (about 2.5 minutes).
Dip apricots halfway into the melted chocolate and lay it on the waxed paper to harden (a couple of hours - I put the sheet in the fridge for a few minutes to speed it up).
Place in waxed-paper-lined boxes or tins. Enjoy! -Diana
