3 large baking potatoes
1/4 cup vegetable oil
paprika
salt
pepper
Grated Parmesan cheese (optional)
Directions:
Preheat oven to 425 degrees F. Pour oil into a 9 x 13 inch pan. Scrub potatoes and cut lengthwise into quarters. Blot cut edges with paper towel to get rid of "film." Place potatoes in pan. Turn to coat evenly with oil, leaving potatoes cut sides up in a single layer. Sprinkle with paprika, salt, pepper and cheese, if used. Bake at 425 degrees F for 30 to 40 minutes or until fork tender. Serve plain or with sour cream. Add extra salt and pepper, if desired. Enjoy! -Diana
