1 pound haddock fillets
1/2 cup flour
1/2 tsp. salt
1/2 cup cubed salt pork
1 small onion, minced
1 1/3 cups water
a few celery leaves
1 large potato, diced
1.5 cups hot milk
1 Tbsp. butter or margarine
Directions:
Cut fillets into cubes. Combine flour and salt and dredge fish with it. Fry salt pork until brown in a deep kettle. Remove pork from kettle and brown onion in fat. Add fish, water, celery leaves and potato. Cover and simmer until vegetables are tender. Add milk, butter or margarine, and additional seasonings if necessary. Heat and serve with oyster crackers. Serves 4 to 6. Enjoy! -Diana
