18 oz. mascarpone cheese
1/2 c. milk
1/2 c. sugar
1 tsp. vanilla extract
3 Tbsp Amaretto almond liqueur
1 c cold espresso or strong coffee
7 oz. package ladyfingers
4 tsp cocoa powder
In a medium bowl, combine mascarpone, milk, sugar, vanilla extract, and 1 1/2 Tbsp Amaretto, and blend until well combined.
In a separate bowl, combine remaining amaretto, and espresso/coffee. Arrange half of the lady fingers in the bottom of a 9 x 13 baking pan. Pour in half the coffee/amaretto mixture. Cover with half the mascarpone mixture. Then, a layer of ladyfingers, pour the rest of the coffee over, then the remaining mascarpone mixture.
Refrigerate 3 hours to allow flavors to blend.
Just before serving, sprinkle with cocoa powder.
