4 c. green beans
2 Tbsp butter
1 Tbsp sesame seeds
juice of 1 lemon
zest of 1 lemon
olive oil (optional)
salt and pepper
Snap the ends of the green beans. Cut the beans into bite-sized pieces if desired.
Slice scallions thinly.
Cook beans in boiling water 10 minutes. Drain and set aside.
Melt butter in a pan, add scallions. Sauté over low heat until softened, about 3 minutes.
Stir in lemon juice and zest. Add beans. Season with salt, pepper to taste. Simmer two minutes.
In a separate pan, dry-fry the sesame seeds. Stir frequently until they smell nutty. Remove from heat.
Remove beans to serving platter, sprinkle with sesame seeds. Drizzle with olive oil if desired.
