Heat a griddle over high heat. Griddle is ready when a drop of water dropped on the skillet dances and sputters.
Drop spoonfuls of batter on the griddle. They're ready to flip when there are little bubbles across the pancake.
Flip, cook briefly, then remove to serving plate.
Serve with butter and maple syrup. And scrapple and bacon and ham and Canadian bacon and eggs...and okay, this is getting a little out of hand.
Make It At Home Tip
Make your own pancake mix. Mix together the dry ingredients - flour, baking powder, sugar, salt - and store in a clean dry containter for later use.
