Blueberry Yogurt Pancakes
1 c. flour
1 Tbsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/8 tsp. nutmeg
1/2 c. plain yogurt
1/2 c. milk
2 Tbsp. oil
3/4 c. unsweetened blueberries
Delicious and nutritious blueberry pancakes. A great centerpiece for Sunday brunch.
In a mixing bowl, combine flour, sugar, baking powder, baking soda, salt, and nutmeg.
In a separate bowl, combine egg, yogurt, and milk. Beat well. Add oil.
Gradually, add flour mixture to egg-milk mixture. Stir until just combined. DO NOT overbeat.
Pour by 1/4 cupfuls onto a hot griddle. Drop several blueberries onto each pancake. Flip after bubbles appear on the surface and the underside is golden brown. Cook until golden brown.
Serve hot with butter and maple syrup or blueberry syrup.
