1 c flour
1 Tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/8 tsp nutmeg
1 egg
1/2 c plain yogurt
1/2 c milk
2 Tbsp oil
3/4 c unsweetened blueberries
Directions:
In a mixing bowl, combine flour, sugar, baking powder, baking soda, salt, and nutmeg.
In a separate bowl, combine egg, yogurt, and milk. Beat well. Add oil.
Gradually, add flour mixture to egg-milk mixture. Stir until just combined.
Pour by 1/4 cupfuls onto a hot griddle. Drop several blueberries onto each pancake. Flip after bubbles appear on the surface and the underside is golden brown. Cook until golden brown.
Serve hot with butter and maple syrup or blueberry syrup.
