8 Tbsp butter (1 stick, 1/4 lb), plus 1 Tbsp
4 oz. white chocolate
1 c sugar
2 tsp vanilla extract
2 eggs
grated zest of 1 lemon
1 Tbsp lemon juice
1 1/4 c flour
Directions:
Melt 1 stick butter in a saucepan. Break the chocolate into small pieces and stir it into the butter. Continue to stir until the chocolate melts.
Blend together sugar, vanilla extract, and egg. Add lemon zest, lemon juice, and sift in flour. Stir in chocolate mixture. Continue to stir until the mixture comes together as a smooth batter.
Spread batter into a buttered, 9-inch cake pan. Bake in the middle of a 375°F oven for 25 minutes, or until cake starts to pull away from the sides of the pan slightly.
