1 Tbsp. vegetable oil
1 sm. onion, finely chopped (about 1/2 c.)
1 clove garlic, crushed
2 tsp. chili powder
1 lb. lean ground pork or turkey
1/2 tsp. salt
1 8oz. can low-sodium tomato sauce
Heat oil in a large skillet over medium-high heat. Cook and stir onion and garlic 3 minutes, until onion is translucent. Add chili powder. Cook, stirring, 1 minute longer. Cool.
In a large bowl, combine ground meat, onion mixture, and salt. Shape heaping teaspoonfuls of mixture into balls.
Spray a large skillet with nonstick spray. Cook meatballs over medium-high heat about 5 minutes to brown. Continue cooking until cooked through. (About 15-20 minutes total)
Stir in tomato sauce. Serve on kaiser rolls with salsa.
