3-4 chicken breasts
1 stick (8 Tbsp. or 1/4 lb.) butter
1 pkg mushrooms (optional)
equal parts crushed wheat crackers and pamesan/romano/mixed dry cheese

A great weekday meal that the whole family will love!
Crush crackers in a large plastic bag. Once crackers are mostly crumbs, add cheese and shake to distribute evenly.
(Note: if you've got small fry at your table, cut large chicken breasts into smaller pieces. Cut each breast into two or three pieces. These will cook a little quicker, of course.) Add chicken breasts to bag and shake to coat chicken with crumb mixture.
Melt butter in large skillet over medium heat. Do not allow butter to burn. Before butter is completely melted add breaded chicken.
Turn chicken after 5-8 minutes. Add mushrooms (optional). Cook for another 5-8 minutes or until done through.
Great with pasta, vegetables or rice. Try it with spaghetti marinara, fettucini alfredo or linquini with white clam sauce.
