1/2 cup EVOO (Extra Virgin Olive Oil)
1/4 cup fresh chopped herbs
2 tablespoons minced garlic
salt and pepper to taste
Use any fresh herbs - basil, cilantro, tarragon work very well.
Directions:
Use this all-purpose marinade to give a fresh flavor to any grilled meat. Try it on chicken breasts or pork chops.Note: "EVOO" is Extra Virgin Olive Oil for those of you who aren't Rachel Ray fans.
In blender or food processor, add all ingredients – olive oil, herbs, garlic, salt, pepper – and blend. Place meat (your choice - chicken, pork, veal) and marinade in a large ziplock bag and seal. Place in the refrigerator to marinate for 30 minutes before grilling.
Remember, once you've marinated raw meat in it, you must discard the marinade. The marinade picks up any germs that the meat may have, which are killed in the cooking process. Basting with the marinade defeats the germ killin' cooking process.
