2 c. flour
2 tsp. baking powder
1 Tbsp. sugar
1/2 tsp. salt
4 Tbsp. butter
2 eggs
1/2 c. cream
cinnamon sugar for garnish
Directions:
Preheat oven to 425°F.
In a medium bowl, sift together flour, baking powder, sugar, and salt.
Cut butter into small cubes and cut into flour using a pastry blender or a couple of forks. Blend until the mixture resembles small meal. (For those of us who have never seen small meal, this means it looks like a lot of teeny tiny balls.)
Beat eggs lightly. Add eggs and combine. Add cream.
Flour a board or part of your counter. Flop the dough out onto the floured space and press out in a sort of circular shape until it's about 1/2 in. thick. With a sharp knife, cut into wedges. Place on a baking sheet and dust with cinnamon sugar.
Bake at 425°F for 15 min. or until golden brown. (If your oven runs hot, don't use baking parchment. Remember that paper burns at 451°F.)
Serve with a nice cup of hot, sweet tea.
