Candied Orange Peel
Peel of 1 orange
1/2 cup sugar, plus additional for rolling
1/4 cup hot water
Add to fruitcake or Italian breads and cookies. A traditional sweet - think Christmas with the March girls in Little Women.
Wipe orange with a damp paper towel. Score into quarters. Remove peel in quarters, then cut into narrow strips.
Place peel in saucepan and cover with cold water. Let boil up once, then drain water. Repeat five times.
Heat the 1/2 cup sugar with 1/4 cup hot water. Stir until sugar dissolves, then add the orange peel. Cook slowly until syrup is nearly evaporated. Drain, then roll the strips in granulated sugar.
Use chopped in recipes, or store in a glass container (add sugar as it gets wet looking).
