2 quarts boiling water
2 tsp. salt
1 pound potatoes, peeled and sliced
1 pound leeks, white part, sliced finely
3 Tbsp. butter
1 tsp. parsley or chives (garnish)
Directions:
Boil potatoes, leeks and salt for 35-40 minutes. Crush potato into small pieces with a fork. Remove from heat and add butter. Garnish with parsley or chives and serve with crusty French bread (recipe in French section). Enjoy! -Diana
