One 8-lb. goose
1 orange, thinly sliced crosswise
1 Tbsp. dried rosemary
NOTE: Geese are very nasty-tempered creatures, so DO NOT feel badly about roasting and eating goose. HAHAHAHAHAHA!!!!!!!
Rinse the goose with cold water. Pat dry with paper towels. Remove all visible fat from the neck and cavity areas. Prick the goose all over with a fork.
Bring a VERY large pot of water to a boil. Carefully lower the goose in and cook for about 30 minutes. Drain.
Loosen the skin over the breast and back portions. Slide orange slices under the skin. Also distribute the rosemary under the skin. Both will help flavor the meat as it roasts.
Place the goose on a rack in a roasting pan. Roast the goose at 350 degrees for about 2 hours. Remove the skin before eating.
