Super Penuche Frosting
2 c. brown sugar
1/2 c. rice milk
1/2 c. (1 stick) margarine
A great butterscotchy frosting for Country Jam Cake. Work fast - Penuche Frosting isn't forgiving.
Have a candy thermometer on hand.
Place all ingredients in a saucepan and stsir over low heat until margarine is melted. Bring rapidly to a full boil, stirring constantly. Heat to 220°F on a candy thermometer. Remove from heat.
Beat until lukewarm and of a spreadable consistency.
