Buttermilk Biscuits


Ingredients:
2 cups flour, plus more for dusting 2 tsp. baking powder 1/4 tsp. baking soda (make sure it's fresh!) 1 tsp. coarse or Kosher salt 1/2 cup (that's one stick!) cold unsalted butter, cut into small cubes 1/2 cup buttermilk, plus more for brushing on 1/2 cup heavy cream
Directions:
Light, fluffy biscuits make any meal special. Preheat oven to 375°F. Whisk together flour, baking powder, baking soda and salt in a medium bowl. Cut in the butter using two knives or a pastry blender until the mix is coarse. It should look like little floury balls. Add buttermilk and cream. Stir to combine. Turn the dough out onto a lightly floured board. Pat into a 6 inch mound, about 1 inch high. Using a floured biscuit cutter, cut out rounds. Transfer onto a baking sheet lined with parchment paper, spacing about 1 inch apart. Gather scraps, reshape and cut out. Brush tops with buttermilk. Bake at 375°F until tops are golden, about 22 minutes. Transfer biscuits to a wire rack to cool completely. Enjoy! -Diana
