1/2 c. white vinegar
1/4 c. aged balsamic vinegar
1/3 c. granulated white sugar
1 tsp. salt
1/4 tsp. celery seed
1/2 tsp. fresh-ground black pepper
1/2 c. olive oil
4 c. green cabbage, shredded
4 c. red cabbage, shredded
1/4 c. Vidalia or other sweet onion, finely chopped
Chopped fresh Italian parsley for garnish
Red, white and green - the colors of the Italian Flag! Serve it at that big Columbus Day blowout. What? You don't have a huge Columbus Day Party? You're missing out! Seriously, this Italian salad is a great addition to any picnic table.
Whisk together the balsamic vinegar, the white vinegar, sugar, salt, celery seed, pepper, and olive oil until combined.
Toss cabbages and onion with vinegar mixture.
Cover and refrigerate overnight to allow for marination (Use your Tupperware Marinater. Shameless plug, I know, but I love that thing!)
Best used within a week. Enjoy!
