1 cup butter
2/3 cup sugar
3 tsp. lemon rind
1 Tbsp. lemon juice
2.25 cups sifted al-purpose flour
Cream together the butter and the sugar. Beat in the egg, the rind and the juice, then add the flour and combine. Mix until ingredients are well-blended. Chill dough 3-4 hours before rolling.
Preheat oven to 350 degrees. Roll out dough onto lightly floured surface and cut into shapes using cookie cutters. Bake for about 8-10 mins. or until barely beginning to brown. Sprinkle with sugar, or frost and decorate; your choice. Enjoy with your tea! -Diana
