Tomato Mozzarella Salad More Recipes Like This


Ingredients: Metric Units
1 med. red onion, very thinly sliced
4 large fresh tomatoes, sliced about 1/2 inch thick
1/2 lb. fresh mozzarella cheese, thinly sliced or shredded
1/4 c. chopped fresh parsley
2 tsp. finely chopped fresh basil
3-4 cloves garlic, minced
Fresh ground black pepper to taste
2 Tbsp. of your best, greenest extra-virgin olive oil
3 tsp. of your best aged balsamic vinegar, or to taste
Directions:
Place a layer of onion in a glass serving dish. Cover with a layer of tomatoes and a layer of mozzarella. Sprinkle with some of the parsley, basil, garlic, salt and pepper. Drizzle with a little oil and a splash of the balsamic vinegar. Continue layering the rest of the ingredients (depending on the size of your dish). Chill. Serves 4.
