Salad:
1 med. head romaine lettuce, torn into pieces
1/4 lb. Gorgonzola or bleu cheese, crumbled
1 or 2 apples
1/2 cup toasted pecans or walnuts
Dressing:
2 Tbsp. Dijon mustard
3 Tbsp. aged Balsamic vinegar
1 Tbsp. lemon juice
1 Tbsp. honey
1/2 cup olive oil
salt & pepper
Directions:
Just because they serve it at swanky restaurants doesn't mean you can't make it at home on a budget. A palette of textures and tastes make this elegant salad pop.
Yield: 2-3 servings
(To stretch to serve more, add more lettuce.)
First, make the dressing:
Mix the mustard, vinegar, lemon juice, and honey in a blender. Slowly add the olive oil to the blender, drizzling it in while blending. Blend until well mixed. Season to taste with salt and pepper. Chill while you prepare the other ingredients.
Then, make the salad:
Tear lettuce into pieces. Slice the apples thinly (don't peel them). Toss lettuce together with cheese and apples. Mix in the dressing. Add pecans, toss again. Serve.
