Gluten Free Orange Cornbread Stuffing

Ingredients:
1 recipe Orange Cornbread 1/2 lb. pork sausage 1 medium onion 1/2 c. celery 2 eggs 1 tsp. thyme 1/2 tsp. sage 1/2 tsp. salt 1 c. chicken stock
Directions:
A wheat-free alternative to traditional Thanksgiving stuffing. Crumble the orange cornbread (or cube it) and set aside. Cut sausage into bite-sized pieces and place in a large skillet. Dice onion, celery. Satue with sausage until meat is browned and vegetables are tender. Drain. In a medium bowl, combine sausage mixture, eggs, thyme, sage, and salt. Add cornbread and toss until well combined. Place in a baking dish. Pour stock over the stuffing. Bake at 325°F for 45 min.
