crust: No Wheat Pie Crust
4 c. apples, peeled and diced
1 c. plus 1/2 tsp. sugar
2 Tbsp. tapioca flour
1/8 tsp. salt
1/2 tsp. cinnamon
4 canned pear halves
2 Tbsp. rum
2 Tbsp. butter or margarine
1 Tbsp. milk
Directions:
A delicious wheat-free dessert, perfectly at home on the Christmas Dinner sideboard.
Prepare pastry and fit the bottom crust into a 9-inch pie plate.
In a large mixing bowl, combine apples with 1 cup sugar, tapioca flour, salt, cinnamon. Coat apples thoroughly. Set aside.
Crush the pears. Spread this pulp across the bottom of the pie crust. Sprinkle the mashed pears with rum.
Pour the apples over the pears. Dot with butter.
Add top crust. Seal and crimp edges. Cut slits in the top crust to vent. Brush top with milk and sprinkle with 1/2 tsp. of sugar.
Bake at 400°F for 45 min. until apples are tender (test this by poking them through the vent with a toothpick).
