3 ripe bananas
2 eggs
2 c. flour
3/4 c. sugar
1 tsp. salt
1 tsp. baking soda
1/4 c. oatmeal
1 tsp. vanilla
1 tsp. cinnamon
Directions:
Banana bread and banana muffins are those miraculous things that take what's clearly not food – squishy black bananas – and transform them into deliciousness!
Yield: 18 small muffins
Preheat oven to 375°F.
In a medium to large bowl, mash bananas. Beat in eggs.
Sift together dry ingredients: flour, sugar, salt, baking soda, and cinnamon.
Add dry ingredients to batter. Add oatmeal. Add vanilla.
Spray a muffin tin with nonstick spray (or line tins with muffin papers). Distribute batter evenly among 18 muffin tins (or, for larger muffins, shoot for 12).
Bake at 375°F for 20 min. Remove from pan. Pour a glass of orange juice and enjoy your breakfast.
