1/2 lb. butter
2 c. flour
1 1/2 c. pecans, chopped
1/4 c. confectioner's sugar (a.k.a., powdered sugar, icing sugar, 10X)
1 tsp. vanilla extract
Extra confectioner's sugar for rolling in
Combine all ingredients. Roll as thick as fingers. Bake at 300° F for 30 min. When cool, roll in powdered sugar.
My Grandma Green has a recipe called Russian Wafers which is very similar to my Grandma Shanklin's Nut Fingers. Me, I got tired figuring out the middle ground each time, so there you have it. Share and enjoy!
