Turkey Bacon and Gruyere Quiche
1 pie crust
1 c. milk
1/2 tsp. salt
1/4 tsp. pepper
1 c. shredded Gruyere cheese
3 pieces thickly sliced smoked, cured turkey bacon
1/2 Tbsp olive oil
1 small onion
1 medium tomato
Prepare a pie plate with a 9-inch pie crust. Bake at 425 degrees F for 7 - 9 minutes, until light brown.
In a large mixing bowl, combine eggs, milk, salt, pepper, 1/2 c. cheese. Set aside.
Slice zucchini in half, then slice thinly. Chop onion. Slice tomato.
Heat a skillet over medium heat and cook bacon 3-4 minutes each side. Remove from skillet, let cool. Chop coarsely.
Gently stir onion, zucchini, bacon into the egg mixture. Pour mixture into pie crust.
Arrange tomatoes on top, then sprinkle with 1/2 c. cheese.
Bake at 425 degrees F for 45 minutes, until center is set (doesn't jiggle when the pie plate is jostled) and the edges are browned.
